Costa Meatballs: This polpette recipe from Costa will have you cooking like an authentic nonna in no time. Ingredients: For the meatballs, 500 grams (1 lb) ground meat (beef or any other ground meat or meat substitute); 150 g (3/4 cup) white bread with no crust, cut into cubes; 15 cl (2/3 cup) of whole milk; 1 egg; 40 g (3/4 cup) Grated parmesan cheese (quality of the cheese is important); 30 g (1/4 cup) chopped flat parsley. For the sauce: 400 g (2 cups) peeled tomato; 20 g (1/4 cup) chopped shallots; 3 c (2 tablespoons) extra Virgin olive oil; Pinch of salt.
Steps: Soak the bread in milk for 10 minutes, then squeeze out the excess moisture. Mix the ground meat with the bread. Add the egg, grated cheese, finely chopped parsley and salt. Shape the meatball into a golf ball size (If they look dry add a little milk, and if they are too wet add some bread). Sautee the shallots in the olive oil on low flame for two minutes then add the meatballs and cook until browned on the outside. For the sauce, roughly crush the tomato, add to pot with meatballs and cook for 20 minutes (a whole garlic clove can be added at beginning and then removed before serving).
